Preheat oven to 200ºC. Heat a saucepan and add olive oil. Add in frozen spinach and saute until cooked. Once spinach is cooked, drain and thaw it.
In a food processor, add in artichokes, thawed spinach, cooking cream, cream cheese and sour cream. Process for 30 seconds. Remove lid and add in ½ cup mozzarella cheese, ¼ cup parmesan cheese, salt, pepper, onion powder and garlic powder. Process for 45 seconds. Add spinach dip to skillet. Top with remaining mozzarella & parmesan cheese. Bake for 13-15 minutes until cheese is melted.
Remove from oven and serve with tortilla chips, salsa and sour cream. Enjoy!
