Whisk together sugar, oil, eggs, melted butter or oil, and milk
Add flour and baking powder
Fold until just combined
Pour into a lined baking tray and bake for around 45 minutes at 180 degrees Celsius until a skewer comes out clean
For the icing: combine 3 ½ cups icing sugar, ½ cup cocoa and around ¾ cup boiling water to make a runny consistency
Whisk the icing and set aside to cool down
Dice the cake into squares
Dip each square in the icing and roll in coconut
