  1. Whisk together sugar, oil, eggs, melted butter or oil, and milk

  2. Add flour and baking powder

  3. Fold until just combined

  4. Pour into a lined baking tray and bake for around 45 minutes at 180 degrees Celsius until a skewer comes out clean

  5. For the icing: combine 3 ½ cups icing sugar, ½ cup cocoa and around ¾ cup boiling water to make a runny consistency

  6. Whisk the icing and set aside to cool down

  7. Dice the cake into squares

  8. Dip each square in the icing and roll in coconut
