Italian Wedding Soup
  1. Prepare the meatballs - Mix gently beef, egg, breadcrumbs, ¼ cup Parmesan cheese, garlic & onion powder, parsley, ¾ teaspoon salt and ¼ teaspoon black pepper, into a large bowl, until just incorporated. Scoop and roll about 50, ¾-inch meatballs and set aside on a baking sheet.

  2. Heat 2 tablespoons of oil in a large pot or Dutch oven over medium until shimmering. Cook meatballs in batches, turning occasionally, until mostly browned all over, about 4 minutes total. Transfer to a clean paper towel lined plate.

  3. Prepare the soup - Turn heat up to medium-high. Add the onions, carrots, and celery to the large pot or Dutch oven, scraping up the browned bits on the bottom and until the vegetables are just tender, about 4 minutes. Add the garlic cloves, basil, oregano, 1 teaspoon salt, ½ teaspoon pepper and red pepper flakes, until fragrant, about 30 seconds.

  4. Add broth, reserved meatballs to the pot. Bring the mixture to a simmer over medium-hight heat, add the pasta and cook until tender, stirring occasionally, about 6 minutes (okay if the pasta is slightly undercooked).

  5. Stir in the kale and lemon juice, until kale is slightly tender, about 2 minutes.

  6. Pour the soup directly into the wells of your Souper Cubes 2 -cup trays or Souper Cubes 1-cup trays. For this recipe you will need three Souper Cubes 2-cup trays, which will give you 6 portions or three 1-cup trays, which will give you 12 portions.

  7. Place the trays with labeled lids in the freezer overnight to fully freeze.

  8. Remove from the freezer and allow the trays to stand on the counter for 5 minutes before removing the lid and pop out the frozen cubes. This will allow the cubes to pop out much easier for you.

  9. Optional: Pop-out the cubes and transfer them to freezer-safe bags or Souper Cubes pre-cut vacuum sealed bags. Label and return back to the freezer.

  10. When you are ready to reheat, remove your soup from the freezer to thaw, ideally for a few hours to overnight in Souper Cubes 5-inch Baking dishes. Then place in the microwave and heat on high until heated through, about 3 minutes. Alternatively, you can place the soup into a small sauce pot and heat on medium-low, stirring occasionally until the soup is heated through.

  11. If you want to heat from frozen, place in Souper Cubes 5-inch Baking dishes or Souper Cubes 5-inch Baking dishes covered, but slightly vented, in the microwave at 50% power until slightly thawed, about 3 minutes. Then remove the cover, heat until warmed throughout, about 4 minutes. Alternatively, you can place the soup into a small sauce pot with a splash of water and heat on medium-low, stirring occasionally until the soup is heated through.
