Preheat sous vide bath to 90°C (194°F).
Slice peeled potatoes about 1 cm thick (use mandoline!)
Package potatoes, butter, milk, and salt.
Submerge package in sous vide bath until potatoes are tender (30 minutes suggested, but this seems to take longer for me).
Pour off butter and milk mixture, then pass potatoes through food mill.
Whisk butter and milk mixture into potatoes, until proper consistency is reached.
