Make the lavender syrup: In a small saucepan, bring the water and lavender to a boil. Reduce the heat and add the sugar. Stir until fully dissolved. Let the mixture simmer for 15 minutes, then remove it from the heat and let it steep. The longer you steep, the more lavender flavor the syrup will have. We recommend steeping for at least 3 hours. Strain out the lavender petals and store in an airtight container in the fridge.
Make the waffles: Add all of the ingredients, except the berries, to a blender and blend until mostly smooth. Fold the berries into the batter and let the mixture rest for 15 minutes. Meanwhile, heat up your waffle iron. Pour the batter ⅓ cup at a time into the waffle iron and cook until fluffy ad golden-brown.
Serve topped with shredded coconut and drizzled with lavender syrup.
