Lemon Energy Balls
  1. Add all ingredients to a blender or food processor, and blend until smooth.

  2. Use your hands to press into balls or shapes of choice.

  3. If desired, roll in shredded coconut or dip in melted white chocolate.

  4. Any leftovers not consumed within a few hours should be refrigerated in a covered container for up to a week or frozen for up to three months.
