Million Dollar Chicken Casserole
  1. If using fresh chicken, cook the chicken, cut into cubes or shred. Cook and crumble the bacon.

  2. Soften the cream cheese (leave out at room temp for 15 minutes). Melt the butter.

  3. Measure out the seasonings.

  4. Add the crackers to a zip lock bag, and use a rolling pin to crush the crackers until they are small but still chunky. Add cracker crumbles to small bowl, mix the melted butter in.

  5. Add the softened cream cheese, sour cream, cream of chicken soup and seasonings to the bowl of a stand mixer, or a large bowl (and grab your hand mixer).

  6. Mix until well combined.

  7. Fold in the cottage cheese, cooked chicken and crumbled bacon.

  8. Preheat the oven to 350°F

  9. Add the chicken and sauce mixture to a 8x8 casserole dish and spread out evenly.

  10. Sprinkle the top with the grated mozzarella, add the cracker topping over the mozzarella.

  11. Bake for 30-40 minutes until heated through and the sides are bubbling.

  12. Remove from the oven and let cool for 5-8 minutes before serving.

  13. Garnish with sliced green onions, if you’d like.
