Press the sumac mixture firmly onto the top of each fillet, coating it completely.
Place the salmon skin-side down on the prepared baking sheet.
Bake for 12-15 minutes, until the internal temperature reaches 145°F and the crust is golden.
Remove from the oven and immediately squeeze fresh lemon juice over the top.
