Tasty Lemon Muffins
  1. Pre-heat oven to 170 degrees Celsius or 190 degrees Celsius conventional.

  2. In a bowl, sift together plain flour, baking powder, baking soda and salt. Set aside.

  3. In a larger bowl, with an electric mixer, mix sugar, melted butter, vegetable oil, lemon zest, eggs and vanilla extract. Mix until sugar is completely melted.

  4. Add sour cream, milk and lemon juice. Mix until well combined.

  5. Gradually add flour mixture, and using a spatula fold until well combined.

  6. Line muffin pan with muffin liners.

  7. Scoop batter into the liners. Fill up to ¾ of the liners.

  8. Bake for 20 minutes at 170 degrees Celsius or 190 degrees Celsius conventional oven.

  9. Let muffins cool down on a rack.

  10. Prepare lemon icing by combining icing sugar and lemon juice.

  11. Pour approximately a tsp of icing on top of every muffin, and let it drip to the sides.

  12. Let icing set, then serve and enjoy!
