Crunchy Maple Peanut Granola
  1. Preheat the oven to 350°F. Line a rimmed baking sheet with parchment paper or a silicone baking mat.

  2. In a large bowl, mix the oats, walnuts, hemp seeds, cinnamon, and salt together.

  3. In a small saucepan, melt the avocado oil and peanut butter until combined. Remove from the heat and add the maple syrup and vanilla.

  4. Pour the wet mixture over the oats mixture and stir until completely combined.

  5. Dump the granola mixture onto the prepared pan in a single even layer.

  6. Bake for about 12 minutes, press the granola down, then bake for another 7 minutes, or until golden brown.

  7. Allow the granola to cool on the pan completely (about 45 minutes) before breaking into clusters.
