Preheat oven to 200°C (400°F).
Thinly slice potatoes into rounds.
Soak slices in cold water for 10 minutes to remove excess starch.
Drain and pat dry thoroughly.
Heat 1 tbsp oil in a skillet over medium heat.
Add sliced onions.
Cook slowly for 15–20 minutes until golden and soft.
Stir in garlic during the last 2 minutes.
In a bowl, toss potatoes with: Remaining olive oil, Paprika, Thyme, Salt, Pepper
Grease a baking dish.
Layer half the potatoes.
Spread caramelized onions evenly.
Add remaining potatoes on top.
Sprinkle parmesan if using.
Cover with foil and bake for 35 minutes.
Remove foil and bake another 20–25 minutes until golden and crispy around the edges.
Garnish with parsley and serve hot.
