Dairy Free Christmas Fudge

Servings: 32 1x1 inch pieces

(This recipe is inspired by Nana’s Little Kitchen Sugar Free Five Minute Microwave Fudge recipe.)

  1. Add the dark chocolate chips, coconut cream and almond milk to a large Pyrex glass measuring bowl and microwave the ingredients for 1 minute.

  2. Remove from the microwave and whisk to incorporate the melted ingredients together. If not melted enough, microwave in 15 second intervals.

  3. Once ingredients are melted completely and whisked together well, add the sweetener, vanilla extract and walnuts. Stir to combine the ingredients. Let the ingredients cool.

  4. Prepare a small baking dish (I use a Le Creuset 7x5x2 stoneware baking dish) and place a piece of plastic wrap in the baking dish and then pour the cooled chocolate goodness into the baking pan.

  5. Place in the refrigerator to firm and set up. I leave it for approximately 4 hours (I even accidentally left it in the fridge overnight) before removing it from the baking dish, removing the plastic wrap and cutting into 1x1 inch pieces on a cutting board. This fudge is very rich!

Store in an airtight container in the refrigerator or the freezer.

** Note:

A friend from the Trim Healthy Community, who is also a coach, just informed me that Whole Foods has changed the recipe for my beloved 365 sugar-free dark chocolate chips. The recipe now includes whole milk which is a huge disappointment. If you are dairy-free you will want to use something else like the Baker's unsweetened baking bar which the only ingredient is chocolate. I have not experimented with that yet in making this fudge but I do use that in other baking recipes. If you use that to keep this dairy-free you will want to use ⅓ or ½ cup of Gentle Sweet instead of just ¼ cup. Thank you Sarah Truitt for the heads up!)

PS. If you have been using the 365 sugar-free dark chocolate chips for a few years like I have, I encourage you to email Whole Foods about the change in their recipe and petition them to go back to the original dairy-free recipe. There is power in numbers with consumers.
