Preheat a sandwich press.
In a medium bowl, add the beans, corn, bell pepper, cheese and avocado and mix to combine. Season with salt and pepper to taste.
Lay the wrap down on the sandwich press and top with half of the wrap bean mix. Fold in half to enclose the filling and gently press down the sandwich press lid.
Toast for 3-5 minutes until the wrap is crisp and golden brown.
Remove the quesadilla from the sandwich press, transfer to a serving plate and cut in half. Serve with sour cream on the side.
