In a large bowl, thoroughly mix all the spices and herbs.
Add the ground turkey or chicken and (if using) the egg or egg whites.
Mix gently with clean hands or a fork until just combined—do not overmix.
For best flavor, cover and refrigerate the mixture for at least 1 hour or overnight to let the spices meld.
Shape into 8 equal patties, about ½ inch thick.
Cook using one of these methods:
Skillet: Heat a nonstick skillet or griddle over medium heat. Mist with oil or cooking spray. Cook patties for 4–5 minutes per side, until browned and cooked through (internal temp 165°F)
Oven: Place patties on a parchment-lined baking sheet. Bake at 350°F for 20–30 minutes, flipping halfway, until cooked through
