Chicken Tikka Masala
  1. Marinate the chicken in the yogurt, garlic, ginger, oil, and spices (Kashmiri red chili powder, garam masala, turmeric, cumin, cardamom, salt) for at least 30 minutes.

  2. In a large pan, heat the ghee and sauté the onion, garlic, and ginger until fragrant.

  3. Add the marinated chicken and cook until browned on all sides.

  4. Add the fire roasted tomatoes, sugar, and salt to taste. Simmer for 15-20 minutes.

  5. Stir in the heavy cream and let it simmer for another 5-10 minutes.

  6. Garnish with cilantro and serve with rice and naan.
