Preheat the oven to 180C and line a baking pan with non stick baking paper or silicone mat
Mix all the wet ingredients together in a bowl.
Add all the dry ingredients
Use a spatula to fold together till well combined
Use an ice cream scoop to scoop evenly sized cookie balls onto the baking sheet.
Lightly wet your hands and gently press down with your fingers (these cookies won’t spread)
Bake for 15 minutes in the centre of the oven
Let them cool a little and transfer to a cooling rack to cool fully
