Preheat oven to 350°F. Grease and line 1 loaf 9x4 Pullman loaf pan (or 2 small loaf pans).
Mix dry ingredients in one bowl and wet ingredients in another bowl.
Combine wet and dry ingredients by folding until combined, then fold in carrots, pineapple, and optional nuts/raisins.
Bake for 1 hour until a toothpick comes out clean.
Cool, frost with vanilla bean cream cheese frosting, and enjoy.
