Beef Enchiladas
  1. Preheat the oven to 350° F and coat a 9x13” baking dish with non-stick cooking spray.

  2. Heat a large skillet over medium-hight heat and add the beef and onions. Brown the beef, breaking it up until it is no longer pink and the onions are translucent, about 8-10 minutes.

  3. Add the bell pepper, refried beans, green chiles, spices, and one can of enchilada sauce. Stir together to combine.

  4. Fill each tortilla with mixture evenly and roll them up. Place them seam-side down in the prepared baking dish.

  5. Cover the tortillas with the remaining can of enchilada sauce. Bake for 25-30 minutes until the sides are bubbly. Top with cheese after removal from the oven.
