Preheat oven to 350° and spray a rimmed baking sheet with olive oil.
Spread the chips out over the prepared baking sheet, top with beans, shredded beef (or your desired protein) and cheese.
Bake for 10-15 minutes, until the cheese is melted.
Top with tomato, green onion, jalapeños, cilantro, and any optional toppings (guacamole, Pico de Gallo, Greek Yogurt and/or hot sauce if desired) and serve.
