Rice Pilaf
  1. Add olive oil to saucepan and place over medium heat. Stir in peppers and onions. Cook about 5 minutes, stirring often until vegetables start to soften.

  2. Pour in rice and broth. Add Mediterranean seasonings and salt, stir.

  3. Bring mixture to a boil. Cover and lower to a simmer for 15 minutes. Remove from heat. Stir and cover, set aside for 5- 10 minutes.
