No-Bake Honey Pistachio Ricotta Bars

  1. In a mixing bowl, combine the ricotta cheese, honey, vanilla extract, and a pinch of salt. Mix until smooth and creamy.

  2. In another bowl, mix the crushed graham crackers with the melted butter until well combined.

  3. Press the graham cracker mixture into the bottom of a lined 8x8 inch baking dish to form a crust.

  4. Spread the ricotta mixture evenly over the crust, smoothing it out with a spatula.

  5. Sprinkle the chopped pistachios on top, pressing them gently into the ricotta layer.

  6. Cover the dish and refrigerate for at least 4 hours, or until set.

  7. Once set, cut into bars and serve chilled.
