High Protein Tomato Soup
  1. Toss cherry tomatoes and garlic in olive oil.

  2. Roast at 400°F for 35-40 minutes.

  3. Transfer everything to a blender with chicken stock, cottage cheese and spices.

  4. Blend until smooth and creamy.

  5. Reheat on low if needed, then serve with a sprinkle of parmesan.
