Cranberry Balsamic Ribeye Roast
  1. Preheat your oven to 400°F (200°C).

  2. In a small bowl, whisk together cranberry sauce, balsamic vinegar, brown sugar, thyme, garlic powder, salt, and pepper.

  3. Rub the glaze all over the ribeye roast.

  4. Place the roast in a roasting pan and roast for 30-40 minutes for medium-rare, or longer for desired level of doneness.

  5. During the last 15 minutes of cooking, baste the roast with the remaining glaze.

  6. Let the roast rest for 10-15 minutes before carving.

  7. Serve with your favorite sides, such as roasted vegetables or mashed potatoes.
