Whisk together all marinade ingredients (Greek yogurt, EVOO, lemon zest, lemon juice, parsley, garlic, honey, salt, black pepper, paprika, oregano, and basil)
Submerge chicken in marinade, coating all sides thoroughly
Marinate for at least one hour (longer is better)
Shake off excess marinade from chicken
Pan fry chicken over medium heat for approximately 6-7 minutes on each side until internal temperature reaches 165°F
Remove chicken and allow to rest
Prepare rice and season with lemon juice, parsley, and salt to taste
Top rice with chicken and sprinkle with feta cheese and hummus or tzatziki
Serve and enjoy
