Prepare your chicken. Mix all the seasonings and coat on both sides of the chicken. Let it sit in the fridge overnight for optimal flavor, or 1 hour before grilling.
Heat your grill to one side high heat and one side low heat. Let it heat for 10-15 minutes.
Spray the grill with high smoke point oil. Lay the chicken skin side down over the hot side of the grill, cook for 2-5 minutes for a char. Flip over, place on the low heat side. Cook for 45 minutes with a lid on.
After 45 minutes, check the internal temperature. Pull the chicken off the heat when the breast reads 155-160°F and the thighs read 165°F or above.
Let the chicken rest for 10 minutes before slicing and serving.
