Authentic Cuban Black Beans
  1. Wash and rinse dried beans

  2. Pressure cook beans, water, bay leaves, and salt for 35 minutes

  3. In a separate pan, sauté diced onion and bell pepper until softened

  4. Add cumin, oregano, and garlic to the pan and mix until fragrant

  5. Incorporate the sofrito mixture into the cooked beans

  6. Add tomato sauce, vinegar, and sugar to the beans

  7. Set pressure cooker to sauté and simmer on low for 15-20 minutes or until desired thickness is reached
