Preheat oven to 200 °C (400 °F)
In a large bowl, combine cauliflower, mushrooms, 2 tbsp olive oil, garlic, oregano, salt & pepper. Toss well
Spread the mixture on a baking sheet or pan. Roast 20-25 minutes, stirring once, until golden and tender
Transfer to a serving dish, drizzle the remaining 1 tbsp olive oil mixed with lemon juice, and sprinkle fresh parsley on top
Serve hot, garnished with extra parsley if desired
