Preheat your oven to 375°F (190°C).
In a large skillet, heat the olive oil over medium heat. Add the diced onion, green bell pepper, and minced garlic, and sauté until fragrant, about 2-3 minutes.
Add the ground chicken to the skillet and cook until browned, breaking it up with a spoon as it cooks.
Stir in the sloppy joe sauce, salt, and pepper. Simmer for 5 minutes.
Transfer the mixture to a baking dish.
Cut the biscuit dough into quarters and arrange them on top of the sloppy joe mixture.
Sprinkle the shredded cheddar cheese over the top.
Bake in the preheated oven for 20-25 minutes, or until the biscuits are golden brown and the cheese is melted and bubbly.
Garnish with chopped fresh parsley if desired and serve hot.
