Preheat oven to 375°F.
In a large bowl, mix together the rolled oats, shredded carrots, cinnamon, nutmeg, and ginger.
Add in the maple syrup, milk of choice, eggs, and vanilla extract. Stir until well combined.
Transfer the mixture to a baking dish and bake for 30-35 minutes, until the center is set.
Allow to cool slightly, then serve with an optional protein frosting.
