Mix together the chia seeds, coconut yoghurt, milk, vanilla and maple syrup in a large bowl until there's no lumps - using a small whisk can help. Cover and refrigerate for 1 hour / overnight to set.
When you're ready to serve, blend up the pineapple and strawberries until smooth and layer this up with your chia pudding. Top with strawberries and desiccated coconut and enjoy!
