Carmela Soprano’s Rigatoni With Sausage And Tomato Sauce
  1. In a large pot, heat the olive oil and garlic over medium heat.

  2. Add the ground sausage and cook, stirring frequently and breaking up the sausage, until the sausage is lightly browned.

  3. Add the wine and simmer until most of the wine evaporates.

  4. Stir in the tomatoes and seasonings and bring to a simmer.

  5. Reduce heat to low and cook, stirring occasionally, until the sauce is thickened, about 1½ hours.

  6. While the sauce simmers, cook the pasta according to package directions.

  7. Toss cooked pasta with the sauce or spoon sauce over individual servings of pasta.

  8. Top with the grated cheese and basil.
