Chop your veg and put it on a tray with olive oil in the oven on 180° for about 30 mins.
While that cooks down, poach your chicken in the chicken broth.
Fry off your chorizo. No extra oil is needed here. When it's cooked, remove it from the pan but keep the chorizo oil it creates.
Pour the chopped tomatoes in along with all the seasonings, salt pepper and sugar. Simmer on low.
Take the chicken out and shred it.
Put it all together in a saucepan and blend.
Add the chicken, chorizo and cream.
Serve with more cream and olive oil and ENJOY.
