Add 1 cup of dry couscous in a saucepot & toast on medium low until lightly toasted.
Pour into a bowl then boil 1 ½ cups of water with a drizzle of olive oil & a pinch of salt.
Once boiling lower temp is to a simmer then add back in the toasted couscous.
Cover until almost all water is absorbed about 15 min, fluff with a fork when done & let cool.
Add the cooled couscous in a serving bowl/platter with the rest of the ingredients.
Whisk the dressing ingredients together in a small bowl or measuring cup & pour it over the salad.
Mix with a spoon gently until the dressing is incorporated into the salad.
Drizzle with more hot honey-Taste for seasoning & enjoy!
