Cover and bake at 425°F for 10 minutes.
Remove, stir and add ¼ cup heavy cream, ¼ cups capers, salt & pepper to taste.
Cover and bake an additional 5-7 minutes.
Remove and stir in 2-3 large handfuls spinach, juice ½ lemon, ⅓ cup freshly grated Parmesan (save some to top!)
