Ginger Beer
  1. To a pan add grated ginger, 1 cup of sugar, 1 cup water, anise & cloves

  2. Simmer on low heat for about 40 mins until mixture turns to a syrup - do not over heat!

  3. Once the time has passed and the liquid turns to syrup sieve to strain.

  4. To the strained syrup add 7-8 cups of water (add any additional sweetener i.e honey if needed)

  5. Add freshly squeezed lemon juice and yeast!

  6. Bottle and allow them to carbonate and age or enjoy with some ice straight away.
