Coconut Lime Lentils
  1. Oil on pan - medium heat

  2. Sear onions, garlic and ginger until onions are translucent

  3. Add curry and tomato paste - burn a little to add extra flavour

  4. Add in coconut milk, brown sugar, soy, lime juice + zest, water and lentils

  5. Taste and a little salt

  6. Simmer for around 25 minutes while stirring every now and then - until lentils are soft

  7. Add frozen spinach and simmer until thawed

  8. Taste and adjust with more salt, soy, sugar etc if you need

  9. Serve with quinoa/rice & top w. coriander (if you’re a real one), and a dollop of yoghurt (crispy pumpkin seeds are also super good on top!)
