yield: about five 9 inch pie shells
In a large bowl, mix sifted flour, butter & salt until crumbly using a fork or pastry cutter.
Make 1 cup of liquid with vinegar & water as follows: First, put 1 tbsp of vinegar in measuring cup; Fills rest of cup with cold/iced water
Gently add eggs to dry ingredients
Pour the water/vinegar combo, bit by bit. Mix well, using a fork or your hands, til it's a nice non-sticky consistency & you can form a large ball. Tip: Add liquid as needed, or if you put in too much, add flour.
Separate in 4 or 5 sections (makes about five 9 inch pie shells). Pat generously with flour, wrap in wax paper and put in plastic bags and chill (it's ok to put them all in 1 big bag, or individual bags)

To use later: Stick in the freezer, dream of making future you making a lovely pie. When ready to use, thaw at room temperature of in the fridge. Don't microwave, be patient instead.
