Mediterranean Quinoa Salad
  1. In a small bowl, add the chopped red onion and vinegar, stirring to combine. Set aside, and chop the rest of the veggies and herbs.

  2. Cook the quinoa according to package instructions. Set aside to cool

  3. Add all ingredients to a large bowl. Toss to combine, and adjust the seasonings to taste.

  4. Serve at room temperature, or refrigerate until ready to serve.
