Biscoff Cookie Cake With Biscoff Buttercream Frosting
  1. Brown your butter (or melt in microwave). Combine butter and sugars and mix until combined. Add in eggs, vanilla, and heavy cream and mix until fully combined. Add in biscoff spread and mix until fully combined

  2. In a separate bowl combine the dry ingredients (flour, baking powder, baking soda, and salt). Mix until combined

  3. Combine dry and wet ingredients and mix until just combined. Add white chocolate chips and chopped biscoff crackers and mix until just combined

  4. Store the bowl in the fridge for at least 30 mins to let the dough chill. When dough is chilled, add to 9” baking round and press dough down until it is firm and level all around

  5. Bake at 350 degrees for 25-30 minutes or until edges are golden brown.

  6. When ready, take out of the oven and add biscoff crackers and chopped white chocolate bar pieces to top of warm cookie. Let the cookie rest until it is fully cooled

  7. Whip butter in stand mixer or hand mixer for 5 minutes. Add in powdered sugar, vanilla, and heavy cream and mix until combined. Add in Biscoff spread and mix until combined. Pipe frosting around border of cake and enjoy!!
