Sheet Pan Breakfast Burritos
  1. Add diced vegetables (bell peppers, onion, potatoes) to a sheet pan with olive oil, salt and pepper

  2. Roast vegetables until softened

  3. Add lean ground breakfast sausage seasoned with salt, garlic powder, chili powder, sage, Italian seasoning, and cumin over the vegetables

  4. Bake until sausage is browned

  5. Blend together egg whites, eggs, cottage cheese, and corn starch

  6. Pour egg mixture over the sausage and vegetables, then sprinkle shredded cheddar cheese on top

  7. Bake until the middle is firm and edges are crisp

  8. Let sit for 10 minutes before slicing

  9. Slice into equally sized rectangles

  10. Mix Greek yogurt with hot sauce, garlic, salt and pepper to make cream sauce

  11. Assemble burritos by placing a rectangle on a burrito tortilla, adding cream sauce and cilantro garnish

  12. Roll burritos tightly

  13. Store frozen and reheat in a few minutes when ready to eat
