Mix chicken thighs with beaten eggs, salt, and tempura mix (or flour and cornstarch combination)
Prepare the sauce by combining ketchup, rice vinegar, brown sugar, honey, minced garlic, soy sauce, sesame oil, cornstarch, and sesame seeds
Heat oil and fry the chicken in batches for 6 minutes until golden and crispy
Cook rice with 1 cup water
Warm the sauce in a pan, then add the fried chicken to coat
Garnish with sliced green onion and additional sesame seeds
Serve over rice
