Easy Kitchenaid Pasta Extruder Dough
  1. IF USING A STAND MIXER:

  2. In a small bowl, mix together the egg and water until well blended. The egg and water together should make up 4.3 ounces of liquid

  3. In the kitchen aid bowl, add the semolina flour and the all-purpose flour. Slowly blend the flour with the paddle attachment on the stir setting for one minute.

  4. Next drizzle the egg mixture over-top the flour. Mix on low speed, do this gradually cause you might need less than 4.3 ounces.

  5. After 30 seconds or so, the mixture will appear crumbly, it will not a form a dough ball.

  6. Wrap the mixing bowl with plastic wrap and let the dough sit for at least 30 minutes at room temperature. The resting step is essential

  7. IF USING A FOOD PROCESSOR:

  8. Add the semolina flour and the all-purpose flour to the food processor, and pulse the flours using the standard food processor blade.

  9. In a small bowl, mix together the egg and water until well blended. The egg and water together should make up 4.3 ounces of liquid

  10. First, add half the egg mixture into the flour, pulse the food processor. Then, add the remaining egg mixture and pulse again. The dough should not come together, in fact, it should be a bit crumbly and in small chunks.

  11. Wrap the mixing bowl with plastic wrap and let the dough sit for at least 30 minutes at room temperature. The resting step is essential

  12. EXTRUDING INSTRUCTIONS:

  13. Place a floured tray beneath the pasta attachment for the pieces to land on.

  14. For spaghetti, turn the mixer on speed 10. Other pasta shapes might require different speeds, refer to the instruction manual for level of speed. Add a chunk of dough into the feeder. The extruder will knead the dough before it starts pushing the pasta out. It took mine a few minutes before it started pushing it out.

  15. Let the pasta get to the desired length, and then use the cutter

  16. Dust the pieces with the flour and set them aside.

  17. Allow them to dry for at least 30 minutes before using them

  18. Bring a large pot of salted water to boil.

  19. Dust the flour off the pasta before gently adding them to the pot.

  20. Simmer for 3 minutes or so. Remove and serve.

NOTE: How to Bring Eggs to Room Temperature Quickly

** Place egg in a bowl and cover them with warm tap water for 5 minutes or until they are no longer cool to touch
