Smoky Sausage & Red Rice
  1. Brown the Sausage: Slice the sausages into 1cm coins. Heat oil in a large pan over medium-high heat. Fry the sausage coins until browned and crispy on both sides.

  2. Sauté Aromatics: Add the frozen onions and sliced sweet pepper to the pan. Sauté for 5 minutes until the onions are translucent and the peppers have softened.

  3. Season: Stir in the smoked paprika, dried oregano, garlic powder, salt, and pepper. Let the spices toast in the oil for 30 seconds until fragrant.

  4. Combine: Add the cooked red rice and the frozen Mediterranean vegetables. Stir well to coat everything in the spices and cook for 5–7 minutes until the vegetables are heated through and any excess moisture has evaporated.

  5. Wilt & Finish: Toss in the shredded spring greens. Stir for 1–2 minutes just until they have wilted but remain bright green.

  6. Serve: Remove from heat, top with grated cheese, and serve immediately.
