Mix seasonings, coat meat, skewer vertically. Roast 180°C covered (40 mins), 200°C uncovered (10 mins). Slice thinly.
Toss shredded veg with dressing ingredients.
Blend all ingredients until smooth.
Mix yogurt, garlic, lemon juice, and salt.
Season plantain with chilli salt and fry in hot oil until golden brown. Drain on paper towel.
Layer flatbread with gyros, coleslaw, chimichurri, aioli & crispy fried plantain.
