Profiteroles
  1. In a sauce pan over medium heat, bring butter milk and water to a boil

  2. Turn off the heat and add flour and sugar, mix with a wooden spoon until you form a paste

  3. Transfer the dough onto a stand mixer with paddle attachment and add the eggs one by one, the dough should be sticky and stretchy (you can also knead them in by hand)

  4. Scoop dough with an ice cream scooper onto a sheet tray lined with parchment paper

  5. Bake at 400°F for 25 minutes or until they're golden

  6. Let cool completely and fill with ice cream!
