Heat vegetable oil in a pot to 170-180C
Chop assorted leftover vegetables and slice raw onion
In a large bowl, sieve gram flour then add in spices, salt and water
Stir through prepared vegetables
Place spoonfuls of pakora mixture into the hot oil (be careful not to crowd the pan) and flip over half way through the cook - they should take approx 6-8 minutes in total
Mix together all ingredients for pakora sauce and serve alongside fresh pakora
Allow the vegetable oil to cool then strain it back into the bottle or a container to reuse
