    Gravy

    Step 1: Prepare the Koftas

  1. In a large bowl, combine the ground chicken with all the ingredients under kofta.

  2. Mix everything together until well combined.

  3. Divide the mixture into small portions and shape them into round koftas/meatballs.

  4. Heat oil in a pan over medium heat.

  5. Shallow fry the koftas in batches until olden brown and cooked through.

  6. Remove the koftas from the oil and place them on paper towel.

    Step 2: Prepare the Gravy

  7. Heat ghee in a separate pan over medium heat.

  8. add finely chopped onions, green chillies, cashews and melon seeds.

  9. Sauté until the onions turn golden brown.

  10. Add javitri (mace) and green cardamom to the pan and sauté for a minute.

  11. Remove the mixture from the heat and let it cool.

  12. Transfer the mixture to a blender and blend it with some fresh cream into a smooth paste.

  13. Now in the previous a pan add some oil and add cinnamon and bay leaves to the oil.

  14. Return the blended mixture to the pan and place it back on low heat for about 10 mins,

  15. now add ½ cup of whisked yogurt, fresh cream and all powdered spices.

  16. Stir well to combine.

  17. Add a litle water if the gravy is too thick.

  18. Simmer for a 10 mins and add kofte to it,

  19. Add some garam masala and crushed kasuri methi to the gravy.

  20. Cook on low flame for 2-4 minutes again.

  21. Garnish with fresh cilantro and enjoy!
