Whisk all the dry ingredients together
In another bowl, mix the egg yolks with milk, lemon juice, oil, and vanilla
Whip the egg whites until stiff peaks form
Pour the wet ingredients into the dry and mix just a little
Fold in the whipped egg whites gently (don't worry if it's not perfect)
Cook on a warm pan with a lid: 2 minutes per side
Add your favorite topping and serve
