Preheat oven to 350°F (175°C). Grate onion and squeeze out all liquid using paper towel or cheesecloth.
In a large bowl, combine ground beef, tomato paste, minced garlic, all spices, parsley, cilantro, and grated onion. Mix with hands for about 2 minutes.
Cut each pita in half. Carefully use a knife to make a pocket if needed. Stuff pitas generously with beef mixture.
Brush outsides of stuffed pitas lightly with olive oil. Heat lightly oiled skillet over medium heat. Place arayes meat-side down and sear for 1-2 minutes until golden crust forms. Sear pita sides until golden and crisp.
Transfer seared arayes to baking sheet and finish in oven for 10-15 minutes until fully cooked through.
While baking, whisk together all garlic tahini sauce ingredients in a bowl. Taste and adjust lemon, salt, or garlic to preference.
Remove arayes from oven and optionally brush with melted garlic herb butter. Serve immediately.
