Ground Chicken & Potato Breakfast Bake
  1. Wash sweet potato. Chop into cubes. Add to baking dish and drizzle avocado oil on top. Dust with salt and pepper. Mix'r up. Put in over 400° for 15-20 min.

  2. Add bell pepper to skillet, sauté for 3 minutes. Cook ground chicken. Add chili powder, cumin, and paprika.

  3. Crack 12 eggs into a bowl. Mix'r up.

  4. When potatoes are cooked to your desired firmness, add cooked chicken & pepper, eggs, and cottage cheese to the baking dish. Place back in oven at 400° for 25-30 min (or until casserole is cooked through the middle).

  5. Portion out and enjoy!
